This issue was resolved in Mac OS X v10.6.2 which allows you to dismiss any additional Software Update windows after installing Rosetta.
To update to Mac OS X 10.6.2 or later, choose Software Update from the Apple () menu.
Jampacks: Repeated request to install Rosetta when installing Jampacks
When installing Jampacks on Mac OS X v10.6, you may be repeatedly prompted to install Rosetta but the installation never completes. When this happens there may be multiple Software Update icons in the Dock.
