Mac mini (2023) with a M2 Pro chip supports up to three external displays simultaneously, depending on the resolution and refresh rate of each external display.

Using a supported hub or daisy-chaining displays can enable up to two displays over a single Thunderbolt port, but does not increase the maximum number of displays that you can connect. Connect the display with the highest resolution first.
