Tags preferences
Apple Configurator 2 tags work like tags in the Finder. You can tag devices to make them easier to organize in the device browser or a selected device window. You can add, delete, or rename them, and change their color.
Tags are stored on the device. So if you tag a device as red and that device can be managed by another Apple Configurator 2 workstation, that administrator will see the red tag. If the device is erased, any tags are also removed.
From the Apple Configurator 2
menu on your Mac, choose Preferences > Tags. To manage tags, do one of the following:
Change a tag color: Select the tag, click Change Color, then select a new color.
Change a tag name: Click the tag, click the tag’s name, then enter a new name.
Create a new tag: Click the Add Button

Delete a tag: Select the tag, then click the Remove button
