Uninstall the Safari 4 developer preview using uninstaller that is included on the Safari 4 developer preview disk image.

If you want to verify that Safari 4 developer preview is related to the Mail issue, you can review the Mail CrashReporter logs in Console for a "com.apple.JavaScriptCore" line such as this (other information will also appear in the logs):
